Simple Meals the Whole Family Loves

Another week, another meal plan. The kids are having fun coming up with their contribution each week, and honestly we are still loving dinner more and more each night knowing whatever we are having was chosen by someone at the table. Meal planning has become super simple and the kids are invested in what we are eating — win, win!

Here are the simple meals we are eating this week:

Simple meals your whole family will love

Monday:

Maple Dijon Pork Chops, with Rice & Veggies

My husband asked for pork chops. I wasn’t sure what I was going to do with them but when I was down to the wire last night and dinner needed to get done, I grabbed some deli mustard, dijon mustard and maple syrup and whipped up a glaze for the pork chops. I let the kids paint them while I put the green beans and carrots on and made some brown rice. The whole thing took less than 30 mins and tasted great!

Tuesday:

Club Sandwiches & Microwave Chips

Tuesdays are for karate meaning I need meals I can make super quick and get my family out the door in a hurry. My son loves club sandwiches, LOVES them and since this is his big night of the week. I’m nurturing him with one of this favorites. I still need something fun to satisfy my love of cooking, so I am giving this microwave sweet potato chips a try, yes I said MICROWAVE! I’ll let you know how those turn out.

Wednesday:

Shrimp Fried Rice, w/ Stir Fry Veggies

Shrimp Fried Rice is my favorite – I use Tamari Soy Sauce since I am gluten-free and add some homey, lime and red chili pepper to my shrimp to make them sweet & spicy. My local grocery store sells the best stir fry veggies in giant 5 pound frozen bags – they are flash frozen, so they are super fresh and don’t get soggy like many frozen stir fry veggies do. I just have to heat them up and dinner is ready to go. Again, less than 30 mins.

Thursday:

Coconut Waffles w/ berries & cream

The little one would eat breakfast 3 times a day if I let him, so when he asked for brinner (breakfast for dinner) I knew just what I wanted to make. We experimented with coconut cream pancakes two weeks ago and people (read: my kids) are still raving about them. This time I’m putting them in the waffle iron to see how they do. I looked for a recipe similar to what I’ve been doing and this is the closest I could find, ours is similar, except gluten-free. A couple more experiments and I should be able to share our recipe.

Friday:

Spinach Strawberry Salad & Croissants

A Facebook friend reminded me of this gem a few days ago. It’s one of our favorites and you can never go wrong in my family’s eyes with a basket full of warm croissants on the table.

I know Strawberries aren’t available for everyone right now, but our season is just beginning and I am taking full advantage of the 5 pounds for $4 sale that’s been going on here.

Saturday:

BBQ Turkey Burgers

We’re having our rainbow loom making birthday party today, after a house full of kids the last thing we’ll care about is being in the kitchen. Burgers on the grill it is, my husband likes to barbecue them (and put barbecue sauce on them) and we love it.

Sunday:

Fish Tacos

My oldest has requested fish tacos and how could I deny such a request — they are my personal favorites after all. We buy still warm tortillas fresh off the line and squeeze limes right over the fish and queso fresco. It’s simply divine.
