Week’s Worth of Dinners: Fall Family Favorites

Hooray for Fall!

We are finally starting to experience temperatures below 80, so I am taking full advantage of them while they last — look for a full menu of fall family favorites this week.
A week's worth of dinners, these are some of our fall family favorites

Monday:
Cauliflower & Potato Soup with some grilled cheese toast points (grilled cheese cut into triangles)

I had my first experience with Cauliflower Soup at a fancy restaurant. My mind was blown, it was so creamy and velvety and cheesy and smooth. It filled me up and warmed me from the inside out — it was everything a good winter soup should be. I’ve been perfecting my own version of this soup ever since. Mine is fairly similar to this one, I will try to take a few notes as I whip it up to share with you here later.

Tuesday:
My Favorite Fall Salad

Tuesdays are for karate — that means we only have a short amount of time to eat and do homework and get things done around the house. This week I’ll keep things simple by serving our family’s favorite fall salad. It’s sweet, it’s savory, it’s even kind of healthy … it’s a recipe you need to bookmark right away.

Wednesday:
Ground Turkey and Black Bean Burritos

My husband’s favorite meal. He digs just meat and beans and cheese, but we garnish ours with shredded lettuce & carrots, fresh salsa, black olives, avocados (when they are ripe) and cherry tomatoes.

I like to eat my burritos deconstructed (without the tortilla even …) here’s what my inside out burritos typically look like

Thursday:
Breakfast for Dinner!

Thursday night is practically Friday which in my mind means, it’s pretty much the weekend! I like to celebrate and do fun things with my family on the weekends but now that they are in school, I feel like I need to squeeze in family traditions and activities any chance I get, Thursdays are now family days!

We’re celebrating this one by doing something that always feels indulgent, like eating ice cream before the meal … we’re having breakfast for dinner. Not just any breakfast though, the BEST PUMPKIN PANCAKES … I have every tasted! You simply must try these Pumpkin Maple Pancakes and if all those flours intimidate you, just do what I did and pick up a gluten-free pancake mix to make things easier on yourself.

Friday:
Spaghetti & Meatballs

Everyone’s favorite.

Saturday:
Kids Choice

If given a choice, my daughter will ALWAYS choose corn dogs and macaroni and cheese. Ironically enough, I would have chosen the exact same thing when I was her age.

Sunday:
Gluten Free Meatloaf, Garlic Mashed Potatoes & Fresh Green Beans (recipe coming soon)

Folks, I am on to something here. I think I have a real winner with this one. Welcome back to my dinner rotation Mr. Meatloaf.
