Before I tell you what we’re eating this week, I’d like to ask for your help.
I’ve been slipping these last few weeks, and now with the season’s changing I can feel myself falling back in to old, not-so-healthy routines. It seems much easier to me to come up with light, fresh meals when it’s 100+ degrees outside, but the moment things start to cool off my body craves meat, and salt, and chocolate … fortunately, not all at once.
This is the best I could come up with this week, please if you have some healthy fall favorites or tips for keeping on track when cravings are at full force, share them with us in the comments below. You could be my new best friend!
Meat, cheese, chips. Quite possibly my favorite meal of all time. I convinced myself these were healthy tonight by adding black beans, lettuce, black olives and salsa. Who am I fooling? Oh well, we all loved it.
Deli Style Subs
I’ve got a hot date with my sister-in-law tomorrow night to go see Bon Jovi, dinner needs to be quick and simple. Doesn’t get more simple than this.
Favorite Fall Salad — Roasted Butternut Squash, Cranberries, Feta and Bacon Salad
I add some sweet potato twists or breadsticks to this to complete the meal and keep my family super happy and super healthy.
Spaghetti & Turkey Meatballs
I’ll be roasting a small spaghetti squash for me and whipping up noodles for the rest of the fam. I’ve been perfecting my gluten-free meatballs, and I am almost ready to share them with folks. Hopefully this will be the last taste test before I do.
Pork Tenderloin with baked sweet potatoes, and roasted broccoli
Another fall family favorite, my kids go bonkers for roasted broccoli. Even more so than they do for french fries! My kids are weird, they also love anything with lemon, and/or parmesan.
I’ll be on a plane heading away from my littles, but home to my parents and to meet my sweet little niece for the very first time. I’ll take the good with the bad, sad to miss my mother-in-law’s birthday party but I know she will understand.
