School has officially begun and I’m looking for ways to really connect with my kids in the short time we have all together in the evening. We bond well in the kitchen, so we are celebrating the new school year with a week’s worth of family favorites. Can you guess which family member chose which meals? My inlaws are here this week too! So we were able to fit everyone in, it’s going to be a great week.
I’m going to try and keep planning breakfasts as long as I can, we may come to a point where we are running out the door so fast we result back to our routine quick and simple standards, we will see.
A few things you should know about us:
- I’ve been gluten-free since Feb, my family is not
- We try to eat as clean and healthy as possible, but we’re not perfect
- I also try to limit sugars and sweets, but we do enjoy occasional treats
- The lunches posted here are for my kids, I usually eat some sort of soup, salad or leftovers
- We typically eat out once a week, usually on Thursdays
- I don’t plan for lunches on the weekends, we just do whatever or eat leftovers
A Week’s Worth of Family Favorites:
Breakfast: Greek Yogurt & Granola w/ pecans & chocolate chips, w/ chocolate almond milk
Lunch: Homemade Lunchables w/ grapes & animal crackers
Dinner: Spaghetti & Meatballs and crusty garlic bread
Spaghetti & Meatballs is an all-time classic, it’s hard not to love it. We’ve lightened it up by using a sauce with no added sugars and using half lean ground beef and half ground turkey in our meatballs. Because I’m gluten-free I bind mine with fresh spinach leaves and extra parmesan cheese, I promise no one even misses the breadcrumbs. We’re using brown rice spaghetti noodles from Trader Joe’s and I have some leftover spaghetti squash to replace half of my noodles. My favorite meal with hardly any guilt! (No garlic bread for me)
Breakfast: Raspberry Peach Mango Lassies and a small cereal bar
Lunch: Peanut Butter & Jelly Sandwiches w/ carrots and celery and some trail mix
Dinner: Tuna Casserole
My daughter loves fruit, but isn’t big on creamy smoothies. She prefers ones made with all fruit and water or apple juice. I’ll appeal to her love of strong fruit flavors by combining peaches and raspberries, then adding some frozen mango and pomegranate kefir. If it’s too tart for my liking, I tone it down with green tea. Sounds weird, tastes good. For dinner, we’ll have a gluten-free version of tuna casserole. My first time attempting this, I’ll let you know how it goes!
Breakfast: PB & Banana on Waffles
Lunch: Turkey Bacon Wraps w/ cherry tomatoes and wheat thins
Dinner: Homemade Corndog Muffins and Mac N Cheese
My daughter could live on corn dogs and peanut butter. Really. I appease her as often as I can, but I’m going to try something new this time. Corn muffins with the hot dog bites in the middle, they look and sound adorable on Pinterest, I’ll let you know how they turn out in real life. Going to keep it real for you guys here, my kids prefer boxed mac and cheese. Clearly they are crazy, it is hard for Mom to compete with squeezy cheese goo … but I am going homemade tonight and they can’t stop me — Haha!
Breakfast: Applesauce, Pears and a Cereal Bar
Lunch: Apples, Peanut Butter, Cheese Slices, and Almonds & Raisins
Dinner: Pad Thai*
We had stir fry twice last week, so we are having another favorite in a similar style. We like to make our Pad Thai with peanut butter (see comment above about my children loving the stuff — actually we may be on peanut butter overload by the end of this week! Remind me to leave it out next week) This isn’t our recipe, but it sure looks tasty!
Lunch: Mini Subs
Dinner: Taco Night
Because everyone loves Taco Night!
Breakfast: Berry Baked Oatmeal
Dinner: Pizza Night!
Family Movie Night
Breakfast: Fruit Salad & Scrambled Eggs, maybe a piece of ham too
Dinner: Honey Pecan Salmon w/ Roasted Veggies
My son loves seafood, loves it! He begs for swordfish and salmon every week, but it is typically outside of our price range. I picked up a bag of frozen wild caught salmon this week, let’s hope it fills his seafood craving.
