Family on the GO! That certainly describes us this week, in fact, this may be the most hectic week of the entire summer! We’ve got company coming, a baby shower for 5 moms to be! (more to come on that), a ton of back to school projects, and WE LEAVE FOR DISNEY early Friday morning. To say I am starting to freak a bit would be an understatement. Things have piled up that couldn’t be done till the last moment and the last thing I want to worry about is spending lots of time in my kitchen. This week you’ll see a few of my favorite easy recipes for nights when your family is on the go, simple lunch and breakfast ideas – even a look at what we’ll be eating on the road.
I won’t have a meal plan for you next week, since we’ll be hanging with Mickey and the gang, but hopefully you’ll have plenty of ideas to choose from these past meal plans (Mostly Meatless Meals, Fresh Summer Meals, and Healthy, but Hearty Meal Ideas.
A few things you should know about us:
– During the summer, I plan all 3 of our meals
– I’ve been gluten-free since Feb, my family is not
– We try to eat as clean and healthy as possible, but we’re not perfect
– I also try to limit sugars and sweets, but we do enjoy occasional treats
– The lunches posted here are for my kids, I usually eat some sort of soup, salad or leftovers
– We eat lunch out on Thursdays during the summers
– I don’t plan for lunches on the weekends, we just do whatever or eat leftovers
Simple Meals & Easy Recipes For Your Family:
Breakfast: Yogurt & Granola
Lunch: Cheese Quesadillas
Dinner: Chicken Gyros & Tzatziki Sauce
This is one my absolute favorite meals, not sure why I don’t make it more often. Now, I know what you’re thinking … this isn’t as easy as you were hoping. Well, there’s a reason. I have the most time to spend in the kitchen on Monday so I want to give my family something healthy & wholesome to start our busy week.
Breakfast: PB & Banana on Toast
Lunch: Snack Lunch (Crackers, Meat, Cheese, Fruit, Veggies, Whatever we have on hand)
Dinner: Corn Dog and Mac & Cheese
I’ve got a huge shower and lots of other mommies to attend to, so Dad will be taking over dinner duty, which almost always means some sort of hot dog will be served :)
Breakfast: Cherry Berry Smoothies
Lunch: Peanut Butter & Smashed Berry Sandwiches
Dinner: Fish Tacos, my favorite! With copycat Zoe’s feta slaw and this amazing fish taco sauce
I have misplaced my favorite fish taco recipe (wahhh!) no worries though, it’s really just tilapia, lime juice, a bit of onion and jalapeno minced up and heated in the skillet for a few minutes.
If I can find it, I will update — it’s too good not to share. Fresh, still warm tortillas are what really make this meal awesome. I’m lucky to live a few minutes away from a store that bakes them fresh. Yum!
Lunch: BLT wraps with ranch & carrots
Dinner: Sloppy Turkey Joe’s
I MUST fill you in one this one folks. Ground turkey, ketchup (preferably with no high fructose corn syrup), dark molasses and a few spices make for a wonderfully delicious sloppy joe. I’ll try and get this recipe shared to you in the next 2 weeks!
Breakfast: Subway Breakfast
Snacks: Apple Slices, Peanut Butter Pretzels, and Trail Mix Energy Bites,
Dinner: Deli Style Sammies
We’re on the road starting at 4am, so by the time we get hungry Subway will be a great place to stop and fuel up for the day. We can have a hot breakfast and get lunch made to go for on the road!
Snacks: Clif Kidz Bars & LARA Bars, Grapes, and Cheese Crackers
Dinner: Burgers & Fries
We’re on vacation! We might as well it eat like it. There’s nothing wrong with enjoying some classic American road trip food every now and then.
Breakfast: Oatmeal w/ pecans & raisins
Snacks: Lightly Sweet Popcorn, Trader Joe’s Cereal Bars, and Bananas
We’ll be arriving in Florida on Sunday, and we’ll probably celebrate by hitting the beach all day and retiring to our room early to crash before we take on Disney on Monday. Pizza is the simplest choice and if we order from Domino’s, I can get a gluten-free pizza for myself. I’m weird, but I like mine with bacon, pineapple, mushrooms and jalapeños :) Got my protein, fruits, and veggies covered right there.
